Vegan Milk White Cookies

The second week in to our quarantine, I asked Roderick what dessert he missed most and if he could have anything what would it be? He immediately said glazed donuts. So I was determined to create the perfect glazed donut to put a smile on my little trooper's face. While using the resources I had (which doesn't include a donut pan) I told him excitedly mommy was going to make donut holes instead because we were lacking said pan. I am not a great baker, and figured if I put the dough in the oven in the shape of a ball, they would come out that way. Wrong. They came out cookie shaped and absolutely delicious. Even my husband who does not have a sweet tooth devoured these cookies. We immediately began dreaming up what our vegan cookie company would be called and how we could virtually send these cookies to everyone we love. Roderick came up with the name "Milk Whites" for the cookie and we decided to call the company No Moo. While I can't send these to you virtually I encourage you to find your favorite baking partner and give these a try!


Cookie

Glaze

  • 2 tbsp dairy free milk (maybe need 1 more tbsp depending on batter consistency)

  • 1 pinch salt

  • 2 tbsp vegan butter, melted

  • 2 cups powdered sugar


For the cookie:

1. Mix the apple cider vinegar and dairy free milk together. Let sit for 10 minutes (it will begin to curdle and form the consistency of buttermilk)


2. Preheat oven to 350 degrees and line a cookie sheet with parchment paper


3. Add all of the dry ingredients to a bowl and whisk together


4. Once the apple cider vinegar and oatmilk mixture is ready, combine all of the wet and dry ingredients together


5. Form circles with the batter and cook for 8 minutes


6. Let cookies cool


For the glaze:

1. While the cookies cool, whisk together the butter, milk, and salt


2. Add powdered sugar in to the butter and milk mixture in batches until a smooth glaze forms


3. Dip cookie tops in the glaze, let cool for 2 minutes until the glaze solidifies a bit
