Vegan Gluten Free Chocolate Chip Banana Bread


Roderick and I had so much fun making this delicious Vegan Gluten Free Banana bread. I seem to have a terrible time selecting bananas that aren't so green you get that weird film taste in your mouth verses so ripe they turn to mush the next day. I also hate wasting food, so this vegan gluten free banana bread is a life saver in our house, and bonus the boys LOVE it.


Ingredients:

2 3/4 cups oat

1/2 cup granulated sweetener (I used stevia)

1 1/2 tsp baking powder

1/4 tsp salt

1/3 cup + more for the top dairy free chocolate chips (we love the Lily's brand)

3/4 cup plant based milk

2 medium super ripe bananas

1/2 tbsp vinegar

1 tsp vanilla


Directions:

1. Preheat oven to 350 degrees

2. Line a loaf pan with parchment paper

3. In a food processor combine oats, sweetener, baking powder, and salt and pulse until a fine flour like consistency is formed

4. In a small bowl mash the bananas until they are smooth

5. Add plant based milk, vinegar, and vanilla to the bananas and stir well

6. Combine banana mixture with dry ingredients

7. Fold in chocolate chips and pour in to loaf pan

8. Top with chocolate chips and bake for 40 minutes or until tooth pick comes out dry
